Paua Fritters with Avocado & Wasabi Salsa

For the fritters

Ingredients

  • 1 kg Paua (minced) 
  • 1 Cup Flour 
  • 1 tsp Baking Powder 
  • 4 Eggs 
  • 4 tbsp Milk 
  • 50grm Red Onion (diced) 
  • 3 tbsp Coriander (chopped) 
  • 2 tbsp Sweet Chili Sauce 
  • 2 tbsp Lime or Lemon Juice 
  • Salt & Pepper 
  • Oil for Cooking 

Method

Sieve flour & baking powder into a bowl a nd make a well in the centre.  Next lightly whisk eggs and pour with the milk into the well and whisk together.

Combine all other ingredients to batter mix and fold together.

Pre-heat non-stick pan or BBQ to a medium heat & lightly oil. Cook a small amount to taste and correct seasoning if needed.

Avocado & Wasabi Salsa

Ingredients

  • 1 x Ripe But Firm Avocado
  • 1 Large Lime Juiced
  • 1 TBLS Red Onion Finely Chopped
  • 2 TBLS Good Quality Olive Oil
  • 2 Tsp Coriander Finely Chopped
  • 1 ½ Tsp Prepared Wasabi
  • 1 Tbl Sweet chilli sauce.
  • Salt & Pepper to Taste

Method

Dice Avocado into 1cm Cubes and combine with remaining ingredients. Carefully fold together trying not to mash Avocado.More Wasabi can be added depending on personal taste.
