Creamy Mascarpone and Smoked Salmon Tagliatelle

This delicate pasta sauce makes a fantastic first course. It can be prepped in no time while the pasta cooks!

Ingredients

  • 250 - 300g fresh tagliatelle pasta
  • 200g mascarpone
  • 30g butter
  • 150g smoked salmon
  • 20g grated parmesan or ViaVio NoZtrano Cheese
  • Pinch of salt, parsley and basil

Method

1. Fill a large pan with water and add a pinch of salt. Cover and bring to the boil

2. Once the water in the pan is boiling, add the Tagliatelle pasta and cook for 7 to 8 minutes until al dente, stirring occasionally.

3. In a large frying pan, melt the butter and gently stir in the smoked salmon. Add the mascarpone, pinch of salt and pepper and spoon of the reserved pasta water to get a creamier texture.

4. Drain the tagliatelle pasta when ready and stir into your mascarpone and smoked salmon sauce. Sprinkle with chopped parsley and basil and dust with the grated parmesan.
