Fig, Goat's Cheese, Proscuitto and Walnut Salad

Serves 3-4

Ingredients

  • 100g rocket leaves
  • 100g prosciutto
  • 160g goat's cheese
  • 100g walnut pieces
  • Fig Vincotto
  • 12 ripe figs

 
Method

Arrange rocket leaves on a large plate.  
Cut goat's cheese into pieces and tear the prosciutto into bite-sized pieces.  
Arrange on top of the rocket with walnut pieces and halved figs.  
Drizzle Fig Vincotto over the salad before serving.
 

Options:
Use your favourite blue cheese or feta instead of fresh goat's cheese
Drizzle with walnut oil, olive oil or Caramelised Fig Balsamic instead of Fig Vincotto
Use bacon instead of proscuitto
