Nacho Beef

Slow-cooked spiced brisket, cheese, nachos, gravy, pickled onions, whatever else you want on top! Easy, delicious, showstopper. 🔥🔥

Ingredients

  • Big hunk of brisket
  • 1 tsp cumin
  • 1 tsp coriander powder
  • 1 tsp smoked paprika
  • 1 tsp allspice
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 1 can tomatoes
  • 400ml orange juice
  • 100ml lime juice
  • 2 cups beef stock
  • 1 large onion
  • 6 garlic cloves
  • 2 guajillo peppers (optional)
  • 1 iceberg lettuce
  • 2x handfuls mozzarella
  • 2x nacho chips
  • Olive oil 
  • Pickled onions
  • 2x red onions
  • 1 tbsp salt
  • 1 tbsp honey
  • 1 cup water
  • 1 cup vinegar

Method

Cut brisket into big chunks, mix spices together and coat brisket, keeping what's left over of the spice mix.

Brown at the bottom of a big pot, leaving the residue at the bottom. Deglaze with onions, and garlic, and add orange and lime juice once transparent.

Then add the rest of the spice mix, tomato can, and beef stock. Bring to a rolling simmer and add beef back in, with chilli if you like (deseeded removes the kick).

Simmer on low for 3 hours

In the meantime heat pickle mix until honey and salt resolve, then slice onions and add to a jar, and cover with pickling liquid. Leave for at least 45 mins

Once meat is soft and falling apart, arrange nacho chips onto tray and add pulled beef brisket. Cover with cheese til brown

Reduce the leftover gravy til thick, and add more cheese if desired. Pour over brown cheese, top with iceberg lettuce, pickled onions, guacamole, lime juice, fresh chilli, and whatever else you like!
