These are so simple, and one of my favourite things to make with my children. It’s a fun way to get the kids involved, with lots of laughter and lots of mess. Bliss! Puris can be served alongside a curry, filled with something sweet, such as kheeraj, or something savoury, such as pani puri.

Ingredients

  • 1 cup plain flour
  • ¼ tsp baking powder
  • ¼ tsp salt
  • 1 tbsp oil
  • oil to shallow fry

Method

Mix the dry ingredients with the oil.

Make a dough using cold water, adding water slowly until the dough is soft.

Divide into approximately 10–12 pieces and roll into balls, about 10cm-diameter rounds.

Heat oil in a small deep saucepan and fry the puris in small batches until they are all cooked. Make sure to spoon hot oil over them as you are frying, as this will make the puris puff up, giving you the hollow inside.

Place them on a plate with some kitchen towels to soak up the excess oil.
