Yellow Split Lentil Dahl

This yellow moong dal cooked with spices will become your new favourite weeknight dinner. It's a quick, easy and a light lentil dish that is best served with fresh hot roti (rotli).

Split yellow lentils

Ingredients

  • 1 cup yellow split moong dal
  • 3 1/2 cups hot water
  • 3 tablespoons oil
  • 1 teaspoon mustard seeds *
  • 1 small onion, diced
  • 2 teaspoons fresh green chilli, minced
  • 1 teaspoon fresh garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 2 teaspoons salt
  • 1/2 teaspoon turmeric powder
  • * Substitute: 1 teaspoon cumin seeds*

Method

Soak dal in 2 cups of hot water for 30 minutes. In a large frypan, heat oil on a medium heat. Add cumin seeds and fry for 30 seconds or until darkened. Add onion and cook for 2-3 minutes or until clear. Add chilli, garlic, ginger, salt and turmeric. Stir paste to infuse masala. Rinse dal and add to frypan, add remaining 1 1/2 cups of water, stir to combine. Bring to the boil, cover and simmer on a medium heat for 20 minutes or until water is reduced.

Serve hot with roti.
